What is Brix?
Brix is used in the food industry for measuring the approximate amount of sugars in fruits, vegetables, juices, wine, soft drinks and in the sugar manufacturing industry. Brix are measured using a refractometer.
When is a grape really ripe?
It turns out that between and among growers and winemakers "ripe" can have different meanings. And for consumers the wines can show dramatic style differences, especially in fruit concentration, as well as bothersome differences in alcoholic content. Shady Grove Vineyard typically harvest when the brix are between 23-24 or at the buyer's specific request.
